Mini Fishcakes Empty Mini Fishcakes

Makes 4 large or 8 small fish cakes.

450g (1lb) Potatoes,Peeled
450g (1lb) Haddock,Salmon,Tuna
60g (2oz) Butter
4tbsp (60ml)milk
1tbsp (15ml) Fresh Parsley,Chopped

Cut the potatoes into quaters and boil for 15 minsuters until soft, Drain. Meanwhile poach the fish in water for 10 minutes, drain and flake the fish, carefully removing all bones.
Mash the potatoes with the butter,milk,parsley,salt and pepper,
Mix the flaked fish and shape into 4 or 8 fish cakes.
Shallow fry in Olive oil for a few minutes on each side, Drain and serve.

They are very nice! My two love them, even my hubby said they were nice and he avoids fish most of the time.
