Chocolate Mousse
Serves 6
100g Good dark chocolate
100g Milk Chocolate
75g Unsalted butter
2 capfuls of Vanilla extract
4 Medium eggs
25g Caster sugar
Pour a few centimeters' depth of water into a saucepan on a medium heat.Bring the water to simmering point and switch off the heat.
Brea the chocolate into small chunks and cut the butter into one of the mixing bowls, carefully place the bowl on top of the saucepan of hot water and keeps stiring until the chocolate and butter have melted.Remove the bowl from the pan and leave to cool on a worktop.
Stir in the vanilla extract into the cooled mixture. Seperate the eggs putting the yolks in one bowl and the whites into another. Add the caster sugar to the yolks and whisk together until the mixture becomes thick. Stir the whisked yolks gently until they have been mixed thoroughly.
Whisk the whites until they are thick enough to make peaks when you lift the whisk.
Take a tablespoon of the fluffy egg white mixture and whisk this into the chocolate.With a tablespoon carefully fold in the rest of the egg white to the mixture until its all one colour.
Spoon the mixture into small glass bowls and put in the fridge to set for a few hours.
